L'Alter-Native: which chef will succeed Quentin Pellestor-Veyrier?

Following the departure of chef Quentin Pellestor-Veyrier, who left to open his own restaurant, Alter/Native is preparing to welcome a new chef, aged just 27.

Quentin Pellestor Veyrier joinedAlter/Native in 2021, taking on the role of chef for the very first time. Trained alongside Gilles Goujon at theAuberge du Vieux Puits (a 5-toque establishment), he was awarded the Grand de Demain Occitanie title in 2022. His departure to open his first restaurant, Maison Pellestor-Veyrier, in the former Amphitryon near Toulouse, marked an important step in his career. His cuisine is rooted in the Occitan region. This departure opens a new chapter for the Biterrois restaurant.

A new chapter for Alter/Native

L'Alter/Native, awarded 3 toques, is renowned for its maritime and vegetal fusion. The menu, centered on fish and vegetables, benefits from an aquaponics kitchen garden, a system in which the fish are raised and irrigated by the kitchen garden. Located in Béziers, the restaurant is the second home of Gilles Goujon, renowned chef of the Auberge du Puits.

The new chef, 27-year-old Clément Peine, has already spent two years as chef at Mère Germaine (2 toques), an establishment renowned for its Provencal cuisine. Alter/Native is scheduled to reopen on Thursday February 6, 2025. Although the philosophy of the restaurant will remain unchanged, the new chef will bring his own personal touch, with the aim of continuing to raise the standard of the gastronomic establishment.

What's on the menu? Customers will be able to choose from three distinct menus: a lunch menu at 75 euros, a 5-sequence gourmet parenthesis at 99 euros, and a 7-sequence gastronomic evocation at 129 euros. A wine and food pairing and a non-alcoholic option are also available.
