Emmanuel Kouri's good addresses

Emmanuel Kouri's good addresses

Mathilde Bourge | 1/26/25, 2:39 PM

Emmanuel Kouri, chef at Les Jardins de Kerstéphanie in Sarzeau, gives us his top tips for buying quality bread, wine and vegetables.

In the peaceful commune of Sarzeau, Brittany, you'll find an exceptional restaurant: Les Jardins de Kerstéphanie. At the helm of this gastronomic treasure trove is Emmanuel Kouri, a passionate and visionary chef who has elevated his establishment to one of the most prestigious in the world, winning 3 toques from Gault & Millau. Driven by a deep love of the Breton terroir, Emmanuel Kouri never ceases to sublimate products of rare quality, carefully selected from local artisans and producers whom he values and with whom he works closely.

Today, he reveals five names that are important to him: men and women whose know-how and commitment resonate in every dish he creates. An ode to craftsmanship and taste, and an invitation to our readers to discover the inspiring addresses that bring Breton gastronomy to life.

Dairy products from Ferme Terezh, Berric

For Emmanuel Kouri, the quality of his dairy products is essential, and it's only natural that he should turn to Fabrice and Malika Delalande, passionate producers at Ferme Laitière "Terezh" in Berric. Farmhouse butters, fromage frais and other dairy products from their artisanal know-how are used in the chef's creations. "You can find their products at Les Halles des Lices in Vannes or at the "Court Circuit" store in Sarzeau", explains the chef.

Beers from Brasserie Compoz, La Mézière

Creativity is at the heart of the collaboration between Emmanuel Kouri and Brasserie Compoz, located in La Mézière. Together, they are currently working on a bold gourmet beer, with flavors of oyster, bread and butter, a nod to Breton gastronomy. Compoz beers are available on their website, as well as in selected partner wineries and restaurants.

  • Where to buy? Compoz, Route de la Melesse, 35520 La Mézière

Vegetables from La Clef des Champs, Sarzeau

For Emmanuel Kouri, Julien Hamon, organic market gardener at La Clef des Champs, is much more than just a supplier:"His fields are an extension of our restaurant." The vegetables, herbs and fruit he grows organically form the basis of a cuisine that celebrates seasonality and proximity. La Clef des Champs products are available at the Sarzeau market and at the Court Circuit store, for those wishing to discover this exceptional terroir.

Bread from La Grange du Boulanger, Theix-Noyalo

Passionate organic bakers Marcel and Stella Cablé perpetuate the tradition of wood-fired sourdough bread at La Grange du Boulanger. Emmanuel Kouri is particularly fond of their breads for their rich flavor and perfect texture. Their creations are available in their bakeries in Theix-Noyalo and Bannalec, as well as at the Halles des Lices in Vannes and the Sarzeau market.

Wine from La Vigne et l'Abeille, Theix-Noyalo

In the Presqu'île de Rhuys, Loïc Fourrure embodies the harmony between earth and bees through his estate La Vigne et l'Abeille. Emmanuel Kouri praises his meticulous work, which gives rise to organic wines of great finesse and exceptional honeys. Loïc Fourrure's products can be found in a number of cellars on the Golfe du Morbihan and directly on the estate.

  • Where to buy? La Vigne et l'Abeille, Chemin du Pré Bertin, 56450 Theix-Noyalo
