Already at the helm of his own gourmet restaurant, Omar Dhiab will open a second location in spring 2025. Different cooking techniques and wine will be the two centerpieces of the establishment.

After winning over the hearts of Parisians with his eponymous restaurant (2 toques), Omar Dhiab announces a new stage in his gastronomic journey. In spring 2025, the chef will open Elbi in the Xᵉ arrondissement, rue de Paradis. This second establishment, whose name means "heart" in Arabic, will put cooking at the center of the plate and offer a relaxed culinary experience, around exceptional wines and refined dishes.

A place where wine and cuisine meet

Passionate about the world of wine, Omar Dhiab has long dreamed of opening a place dedicated to lovers of good food and fine bottles. With Elbi, he has turned this idea into reality, bringing together a sharp wine list and tasty cuisine, all in a modern setting designed by architects Mur Mur. The wine list will feature champagnes by Romain Henin, Jura wines by Nicolas Jacob, those of Maison Glandien, and vintages by Patrick Bouju of Domaine La Bohème in Auvergne.

At Elbi, cooking will be at the heart of the menu, divided into 5 pillars: grilled, roasted, steamed, at temperature and fried. Among the star dishes : lamb from the Pays d'Oc, cooked in its entirety, accompanied by crunchy vegetables and a salsa verde, or zucchini flower reor the generous beef hawawshi, a fragrant Egyptian sandwich.

As for desserts, Omar Dhiab is sure to leave a lasting impression with his revisited classics. These include homemade soft-serves (chocolate-chili, vanilla-potato or praline-coriander) and generous tarts, served by the slice. The chef's semolina cake, always drizzled with caramel and served English-style, will also be on the menu, true to tradition.

Elbi will be a place where you come to quench your thirst, but where you can prolong the pleasure with top-flight dishes; a place that promises a refined yet relaxed culinary experience, in the image of its creator. Scheduled to open in early May 2025, this new venue is sure to earn a place in the hearts of Parisian gourmets.
