Like every year, the Paulée des Vins de Loire welcomes a renowned chef to concoct its closing dinner. For the 2025 edition, Alexandre Gauthier takes over the kitchen.

On Sunday, March 30, 2025, Chartres will host the 20ᵉ edition of the Loire appellations winegrowers' market, a much-anticipated event under the city's Halles, from 10am to 5pm. Organized by the Jallerat family in collaboration with the free commune of Saint-Brice, this market showcases the region's finest wines, allowing the public to meet the winemakers and discover exceptional vintages.

As an extension to the market, the traditional Paulée des Vins de Loire dinner will be held at the Hôtel Le Grand Monarque in Chartres. Since 1983, this culinary event has brought together renowned chefs to offer an exceptional meal, where food and wine marry to perfection. In 2025, the guest of honor will be Alexandre Gauthier, Chef of the Year 2016 and head of La Grenouillère restaurant (5 toques) in La Madelaine-sous-Montreuil.

Alexandre Gauthier, renowned for his simple yet precise cuisine, chooses never to compromise on the quality of his products. "I'm very proud to be able to count on Alexandre Gauthier's friendship for this Paulée. For me, he is undeniably one of the most gifted chefs of his generation", emphasizes Bertrand Jallerat. After the floods that severely affected his establishment in 2023 and 2024, Alexandre Gauthier will come to Chartres with a menu that promises to sublimate Loire wines, aided by Thomas Parnaud, chef of the Grand Monarque gourmet restaurant, and head sommelier Nicolas Duclos. A test meal, organized at the end of 2024 in his restaurant L'Anecdote, enabled the Paulée team to discover the contours of his culinary universe.

La Paulée des Vins de Loire: a veritable institution

Created in 1983 by Jacques Puisais and Georges Jallerat, the Paulée des Vins de Loire has become a veritable institution. Each year, the Paulée dinner showcases the region's wines, pairing them with dishes created by the finest chefs in French gastronomy. Chefs such as Pierre Gagnaire, Alain Senderens and Emmanuel Renaut have already taken part in this exceptional event.

The dinner is reserved for professionals, but the event continues to be democratized with the winegrowers' market. This market is a unique opportunity to meet passionate winemakers and acquire rare wines that are sometimes hard to find on the market. Some forty producers from the Loire Valley appellations will be present, offering a selection of the finest vintages.

A convivial moment will also be offered by Alexandre Gauthier, who has imagined a popular dish to share with the public, to make this celebration accessible to all.

The 41ᵉ edition of the Paulée des Vins de Loire, to be held in Chartres, promises to be an unmissable event for lovers of fine wines and exceptional gastronomy.
