Alexandre Baule takes over the kitchens at Les Roches Rouges

Alexandre Baule is about to take over the kitchens at Les Roches Rouges in Saint-Raphaël. His arrival will be accompanied by the opening of two new addresses.

Since 2022, Alexandre Baule has been at the helm of the Table de l'Alpaga (2 toques), in Megève. Trained in renowned establishments such as l'Oustau de Baumanière and the Martinez in Cannes, he has refined his culinary identity over the years, to the point of imposing his personal style.

He is now preparing to divide his year between the mountains and the seaside. Autumn-winter, he heads for Megève, where he will continue to sign the plates of the Alpaga. Spring-summer, off to the Côte d'Azur, where he will take his place behind the stoves of Le Récif, the gastronomic restaurant of the Hôtel des Roches Rouges.

Le Récif: immersion in the Mediterranean

from May 14, 2025, Alexandre Baule will unveil his vision at Le Récif. A Mediterranean cuisine with vegetal influences, featuring seasonal vegetables, locally caught fish and local meats.

On the menu, an experience in six or seven stages, leaving plenty of room for surprise. A few of the titles are sure to pique your curiosity: "The restaurant will be open from Wednesday to Sunday, from 7.15pm to 9.15pm, until September 28.

Two new addresses to complete the offer

The chef's arrival also marks the opening of two new dining spaces, from May 7, 2025:

  • L'Estelo, a Mediterranean terrace with sea views, featuring grilled fish and colorful Provencal dishes in a convivial atmosphere. Open from morning to evening until October 12.
  • Le Chicoula, a guinguette under the pine forest, ideal for a relaxed, gourmet break. Focaccias, fresh salads, cocktails to sip in the sun... Open daily from 10 a.m. to 7:30 p.m.

By combining commitment, seasonality and local produce, Alexandre Baule has written a new culinary page for Les Roches Rouges. An address that is already shaping up to be a must-visit summer venue on the Côte d'Azur.
