Jérémie Le Calvez opens a new bistro in Saint-Pol-de-Léon

In July, the chef behind La Pomme d'Api in Saint-Pol-de-Léon will open La Pomme Reinette, a more accessible bistro that will be transformed into an afternoon tea room and tapas bar in the evening.

Chef Jérémie Le Calvez and his partner Jessica Chelala, already at the helm of La Pomme d'Api gourmet restaurant (3 toques), are set to enhance Saint-Pol-de-Léon's culinary offering with the opening of a bistro: La Pomme de Reinette. This new establishment, located in the same building as La Pomme d'Api, will offer a complementary experience to that of the gastronomic restaurant.

A project to streamline the offer

"We're very busy in the gastro department," confides Jérémie Le Calvez. "The lunch menu is taking up a lot of space, and a lot of people are coming for that, and we're turning away a lot of customers." Faced with this growing demand, the chef wanted to create a new offer to better distribute the flow.

The idea is to "switch the lunch formula" to La Pomme de Reinette, while offering a broader menu. The bistro will welcome customers throughout the day with a dessert cart, transforming the place into a tea room in the afternoon, then a tapas bar in the evening. "We're doing something that's missing in the Saint-Pol area," says the chef.

A living space open to the outside world

La Pomme de Reinette will be housed in a renovated wing of La Pomme d'Api. "The two parts communicate, so you can keep an eye on everything," explains Jérémie Le Calvez. The bistro will have its own self-contained kitchen and will be able to seat 30 to 40 diners. An outdoor terrace will also be used to offer customers an open-air experience. An enclosed garden will complete the space, offering an intimate and pleasant setting.

At lunchtime, La Pomme de Reinette will offer a menu as well as a few à la carte dishes, with a price range between 35 and 50 euros. In the evening, the ambience will transform into a wine and cocktail bar with tapas, creating a warm and friendly space. Initially, La Pomme de Reinette will be open six days a week, with the aim of eventually introducing a Sunday brunch.

Promoting local players

True to their philosophy, Jérémie Le Calvez and Jessica Chelala intend to "promote local players" in their new project, highlighting local produce and regional know-how.

La Pomme de Reinette is due to open its doors in July, offering residents and visitors to Saint-Pol-de-Léon a new convivial, gourmet and accessible venue.
