Gourmet Restaurant North of Reims, friends and family never hesitate to stop off at Thierry Chevallier's, for the warmth of this family-run address overlooking a flower-filled garden. The little house is cosy, with an intimate charm that shouldn't make you underestimate the talents in the kitchen. The plates are those of a pro, at the service of a celebrated regional product, as much in the presentation as in the intelligence of the compositions: a crayfish dome in hot-cold and tomato cereals, parmesan shortbread and radish pickles, a steamed monkfish steak, shellfish and vegetable broth, parmesan tuile, or an ingot of roasted quail fillets, port reduction, potato galette and fresh chanterelle charlotte, a fine filet of Père Denis Rossini beef and anna apples. Desserts are in a class of their own, with a wide range of options, including a moelleux with Reims pink cookies, strawberries and sorbet, a moelleux with chocolate and custard, or a croustillant de Picardie, a parfait glacé with milk jam and tuiles dentelles.
