Made from the only plot (Les Manigans) planted with Pinot Noir between 8 and 65 years old, this confidential cuvée (1,000 bottles) has a deep garnet-red color. The taut nose opens with spicy, stewed black fruits, supported by peppery Agen prunes. The palate is inviting, salivating, with great depth. Goes well with Salers meat with fleur de sel.

Florence Duchêne, a young winemaker of Franco-Philippine origin, cultivates 4.5 ha of vines with an average age of 40 years, divided into 56 parcels located on either side of the Marne, from Aÿ in Grand Cru to Châtillon-sur-Marne, via Hautvillers and Cumières, on slopes dominated by clay-limestone with a tendency to marl. Grape varieties include pinot noir (51%), pinot meunier (34%) and chardonnay (15%). The young woman has traveled extensively in the world of wine and considers, with Alfred Gratien, that champagne should be to wine what haute couture is to fashion. In a nod to the winemaker's origins, each cuvée is named after a Filipino god.
